Directions

  1. Preheat the oven to 300°F. Remove the thin membrane from the back of the ribs and pat them dry with paper towels. Season both sides with salt, black pepper, garlic powder, ground ginger, and smoked paprika.
  2. Wrap the ribs tightly in foil and place them on a baking sheet. Bake for 2 hours until tender but not falling apart.
  3. While the ribs cook, make the sauce. In a saucepan, combine 1 cup of hoisin sauce, 1/4 cup soy sauce, 1/4 cup honey, 3 tablespoons brown sugar, 2 tablespoons rice vinegar, 2 tablespoons sesame oil, 2 minced garlic cloves, 1 teaspoon grated ginger, and chili flakes if you want heat. Bring to a simmer and cook for 5–7 minutes until slightly thickened. Stir in the cornstarch slurry and simmer another minute until glossy.
  4. Once the ribs are tender, carefully remove them from the foil and brush a generous layer of sauce over them. Raise the oven temperature to 425°F or fire up your grill.
  5. Roast or grill the ribs for 8–10 minutes, brushing with more sauce halfway through until caramelized and sticky.
  6. Let them rest for 5 minutes, then slice between the bones and drizzle extra sauce over the top. Finish with sesame seeds and fresh herbs for color.
