Orange Chicken Cups

- Finely zest the oranges first to get 1 tablespoon of zest. Then slice 4 oranges in half and carefully scoop out the insides, keeping the shells intact. Set aside the juice for the sauce.
- Marinate the chicken pieces in 1 cup of buttermilk for 10 minutes. In a bowl, mix 1 cup of flour, 1/2 cup of cornstarch, 1 teaspoon of garlic powder, salt, and pepper.
- Heat oil in a skillet to 350°F. Dredge the chicken in the flour mixture and fry in batches until golden, crispy, and 165°F inside, about 4–5 minutes per batch. Drain on a rack.
- For the sauce, combine 1/2 cup of orange juice, 1 tablespoon of zest, soy sauce, honey, rice vinegar, brown sugar, garlic, and ginger in a saucepan. Bring to a simmer, then stir in the cornstarch slurry and cook until the sauce thickens and glazes the spoon. Whisk in 1 tablespoon of butter for a smooth finish.
- Toss the fried chicken in the sauce until fully coated.
- Fill each orange cup with a few pieces of chicken. Garnish with parsley or cilantro and a touch of edible flowers or microgreens for a clean, vibrant look.
