Directions

  1. In a bowl, combine 1 pound of ground chicken, 1/2 cup of breadcrumbs, 1/4 cup of Parmesan, 1 egg, 1 teaspoon each of garlic powder, onion powder, and Italian seasoning, plus a pinch of salt and pepper. Mix until just combined and form into 12–14 meatballs.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the meatballs for about 2 minutes per side until golden. Remove and set aside.
  3. In the same skillet, melt 2 tablespoons of butter and sauté 3 minced garlic cloves for 1 minute. Stir in 1/4 cup of chopped sun-dried tomatoes, 1 teaspoon of Italian seasoning, and 1/2 teaspoon of crushed red pepper flakes.
  4. Pour in 1 cup of heavy cream and 1/2 cup of chicken broth. Bring to a simmer, then stir in 1/2 cup of grated Parmesan cheese. Season with salt and pepper to taste.
  5. Add the meatballs back into the skillet, spoon the sauce over them, and let them simmer for 10–12 minutes until the meatballs reach 165°F in the center.
  6. Finish with a sprinkle of Parmesan and a few fresh basil leaves before serving.
