Hennessy Pecan Waffles

- Preheat the waffle iron. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, eggs, melted butter, vanilla, and Hennessy. Pour the wet ingredients into the dry and whisk just until combined — don’t overmix.
- Fold in the toasted pecans and let the batter rest for 5 minutes.
- Lightly grease the waffle iron and pour in the batter. Cook until golden brown and crisp around the edges. Keep warm while you make the syrup.
- For the syrup, melt butter and brown sugar in a saucepan over medium heat. Stir in Hennessy and simmer for 1–2 minutes to cook off the alcohol. Add heavy cream and a pinch of salt, whisking until smooth and glossy.
- Plate the waffles, drizzle with warm Hennessy butter syrup, and sprinkle with extra pecans.
