Ingredients

Directions

  1. In a skillet over medium heat, cook the bacon or sausage until golden and crisp. Set aside on a paper towel-lined plate.
  2. In the same pan, melt 2 tablespoons of butter and add a drizzle of olive oil. Crack in the eggs and cook to your liking — over-easy, scrambled, or fried. Season lightly with salt, black pepper, garlic powder, and onion powder.
  3. If you’re making the sauce, whisk together mayo, Dijon mustard, honey, and smoked paprika until smooth.
  4. Slice the croissants in half and toast the insides lightly in the same skillet until golden brown and buttery.
  5. Assemble the sandwiches by spreading a small amount of sauce on each croissant, layering on the cheese, bacon or sausage, and egg.
  6. Close the sandwiches and let them rest for 1–2 minutes so the cheese melts into the layers. Serve warm.
